Hey, I'll be visiting RMNP in mid-November, and really want to see Chasm Lake!
Is this hike do-able in one day in the winter? What is the snow-cover like above and below the tree-line?

As much as anything at that time of year it will depend on how windy of a day you have. There should not be so much snow that it would be dangerous but..... There is a stretch about 1/4 of a mile past the Chasm/Longs intersection on the way to Chasm that is exposed due to the rather steep sloop on the left side as you go up. If there isn't any snow or ice then you should be fine but if snow has accumulated you would probably want crampons to prevent slipping.

The hike is doable in one day. I think you may have missed your window of opportunity this year for an enjoyable hike though. Fall is quickly turning into winter. I have hiked Glacier Gorge (Black Lake) the past couple weekends in the snow (ranging from none to 5+ in shadowy spots) and ice at Black. Black was kinda treacherous on the last 1/8 mile up. Chasm is on the bright side of the mountain though, so probably has less ice and snow. Longs is getting light snow at night and high temps in the 30's and 40's during the day. Bring your yack tracks and go slow. You should be fine.

dianeh85, you mentioned Black too. That's also one of the hikes on the least... if we were to choose one, which would you suggest?
Any other suggestions for great day or half-day winter/November hikes?

Ohh so many! Welcome to the forums!
I actually have not hiked to Chasm. The opportunity for other hikes got in the way. I think it might be more exposed in November than Black, therefor Black is more doable, bring your crampons (yak tracks). Do you have Lisa Fosters book. It is faabulous! gives miles, elevation' , trailheads in a chart. The book is extensive and totally comprehensive. Great read too. I would suggest the 1. Loch and Mills Lake, 2. definately Emerald to Haiyaha loop, 3. Odessa from Bear (and back to Bear), They are three very beautiful hikes with great Vistas. I am not sure what your abilities are though. I am kind of a take it easy and hike through the woods, take lots of pictures kinda hiker.
